Swinging from one low-calorie post to a rather calorific post may seem bizarre, but that’s the way my life goes sometimes! My last post was all about how well we (my husband and I) have done on the 5:2 diet, with a list (and links) to all of my low-calorie recipes, today is all about feeding the greedy soul inside me for a busy day ahead! And so it was that I opened the fridge door to find……not much! There were two lone sausages and two over-ripe tomatoes lurking in the vegetable drawer, but not much else. I have chickens, so there are always lots of eggs, but, no bacon or mushrooms, or any other “Full English Breakfast” ingredients. I had set myself up for a “FEB” as my dad calls them, so I had to get creative with the little I had to hand. I am always on the look out for simple one-pan recipes, and so I decided to invent a frugal but tasty “I need to go shopping for food quite soon” kind of one pan breakfast!

One Pan Frugal Breakfast

I then discovered that I only had a small wedge of bread left too, and I wasn’t in the mood to whip up a quick loaf of bread – but thankfully I DID have some essential breakfast brown sauce!With time at a premium and my husband chomping at the bit to get to work in the garden, I decided on a one-pan “fry-up” to share the two sausages, two tomatoes and what then transpired as only three slices of bread! It’s not an haute cuisine recipe, and indeed it’s not really a recipe at all but more of an idea, but, I have decided to share it with you today as maybe one day you will be left with a couple of bangers and not much else! I would say that all the breakfast “trackelments” such as brown sauce, Worcestershire sauce and even a dollop of mustard are essential “add ons”.

Breakfast Scramble

(Serves Two)

Frugal Ingredients:

low-fat spray, or a bit of butter

2 lonely sausages, of unknown origin, but always of high quality and probably pork

2 over-ripe tomatoes, on the squishy side, cut in half

2 large freshly laid free-range eggs

3 slices of old bread, cut into 6 smaller slices

sauces, assorted

salt and pepper

Method:

Spray some low-fat spray into a medium-sized frying pan (or add the butter) and then cook the sausages over a low heat, turning them regularly so they brown evenly. Add the tomato halves and continue to cook both ingredients for a further 5 minutes or until the sausages are cooked and the tomatoes are on the point of collapse.

Break the 2 eggs into a bowl or jug and give them a quick whisk, then pour them into the pan, swirling them in and around the sausages and tomatoes. Cook for a further 3 to 5 minutes, or until the eggs are nearly set.

Serve the one-pan breakfast immediately with the bread, that can be toasted. Make sure that both diners (!) get a sausage each and what’s left of the squishy tomatoes, as well as an equal amount of eggs. You can served the toasted bread underneath the breakfast scramble if you wish, this will take it to another dimension and be an “On Toast” breakfast.

Don’t forget the sauces, brown sauce is pretty amazing on this deluxe brekkie! Oh yes, and season to taste with salt and pepper too.

Eat straight away before going shopping for more food!
