Why is sous vide the fastest way to make vanilla extract?

Using the sous vide method of cooking to infuse your alcohol to make homemade vanilla extract not only cuts your infusion time from weeks to hours, in my opinion, it gives it a deeper depth of flavor. By gently warming the alcohol, the flavors and colors of the vanilla beans are quickly drawn into the infusion.

What kind of alcohol is used to make vanilla extract?

There are a few alcohols that can be used to make vanilla extract. Vodka has the most neutral flavor and can be the most cost-effective, but bourbon, brandy, or rum would be different alternatives to vodka. Each different alcohol will give your homemade vanilla extract a unique flavor profile. Leave the top-shelf or high-proof alcohol on the shelf when choosing your alcohol for making vanilla extract. A simple 40% (80 proof) alcohol will do the job.

How do you make traditional vanilla extract?

  2. In a closed canning jar, submerge the vanilla in your chosen alcohol.
  3. Close the container and wait 3-4 weeks until the infusion is complete.

How will I know the vanilla extract is ready?

Your homemade vanilla extract will be ready when the fragrance of the alcohol no longer smells of alcohol and smells strongly of vanilla. The color of the alcohol will be golden to amber in color.

Why use amber jars for homemade vanilla extract?

I have started to use amber jarswhen making my homemade vanilla extract because the amber canning jar provides excellent UV protection for the vanilla extract. This is important because UV rays can sometimes change the components of the vanilla infusion. By blocking the UV rays your DIY vanilla extract will retain the gorgeous amber flavor and color. This is not due to the color of the canning jar but due to the fact that the color amber blocks out the damaging UV rays.

Can you get drunk off of vanilla extract?

It is possible to get drunk off of of this recipe for vanilla extract. With the high alcohol content it is possible if you drank the right serving for your body mass. I do not recommend trying to get drunk off of this vanilla extract or any alcohol, for that matter. Drunkenness is not one of the things I savor. Keep this vanilla extract out of reach of children and use it in appropriate proportions in recipes and co*cktails.

Do you remove the beans after the sous vide or leave them in?

    • Sarah Mock

The choice is up to you! I leave them in for 'carry over' infusion but once the time is up, the vanilla is ready. They can be removed.

What is the advantage of using the sous vide verse an instant pot for vanilla extract? TIA

    • Sarah

Emily, I don't have an instant pot so I can't speak from experience but I know that with the sous vide version you have to the .10 degree control of the temperature. By having a specific temperature I know the alcohol is far below the boiling point of 173.

FAQs

How do you make high quality vanilla extract? ›

You only need 2 ingredients for homemade vanilla extract: vanilla beans and vodka. Let the vanilla beans infuse the vodka for as little as 8 weeks, but for optimal flavor, wait at least 6-12 months before using. Homemade vanilla is more cost efficient than store-bought options. You can try homemade vanilla sugar too.

Why does my homemade vanilla extract taste like alcohol? ›

Remember that all "Pure" extracts are required to have a minimum 35% alcohol content, which is just as much alcohol that is in hard liquor. Alcohol is needed for extraction. Since this may be your first time making extract, you may notice characteristics that you didn't before in your store-bought "pure" extract.

How do you keep vanilla extract from evaporating? ›

Store it in a cool, dark place.

Heat and light can cause evaporation and cause the extract to turn cloudy.

What gives the best vanilla flavor? ›

Tahitian vanilla beans are the most expensive type of vanilla bean, but don't let that deter you. These vanilla beans have a superb flavor and aroma.

Does higher proof alcohol make better vanilla extract? ›

Anything over 80 proof is fine and makes a lovely extract. It's true, though, that the higher the proof, the more vanilla essence will be extracted into the liquid.

How dark should homemade vanilla be? ›

The liquid should be dark golden or brown. The darker the color, the stronger the vanilla flavor.

How much alcohol is in 1 tsp of vanilla extract? ›

The amount of alcohol in pure vanilla extract varies by brand. Some contain as much as 35% alcohol by volume (ABV), which is equivalent to 70-proof vodka. However, a teaspoon of that vanilla extract has very little alcohol, somewhere closer to 1%.

Is it better to get vanilla extract without alcohol? ›

There is a difference of opinion about the difference in flavor. Some people say or report that alcohol, that non-alcohol vanilla, which is often used in raw desserts, has less of an aroma than the pure alcohol extract.

Does vanilla need to be in a dark bottle? ›

Select a dark glass or amber-colored bottle for your vanilla extract. Light can degrade the quality of the extract by breaking down its aromatic compounds. Dark glass helps to protect the extract from light exposure, preserving its flavor and aroma. Air can also impact the quality of vanilla extract over time.

Why is there stuff floating in my vanilla extract? ›

Vanilla bean pod particles may also break down over time, so it isn't uncommon to see specs or "floaties" in your extracts, especially if you sliced or cut your beans before submersing them. This is normal.

How many times can you reuse vanilla beans to make extract? ›

Re-fillable: Once you run out of vanilla, refill the bottle with Vodka and use the beans for another batch (they will last for up to two batches). Also, the vanilla extract wont expire as long as it's stored in a cool, dry place.

Can you use Everclear for vanilla extract? ›

If Everclear 189/190 isn't available in your area, Everclear 151 or 120 will do the trick. If you cannot purchase Everclear at all, the highest proof vodka you can find will work. You'll need to infuse much longer (closer to the 12 months mark) and use more vanilla beans per bottle of extract.

Is it cheaper to make your own vanilla extract? ›

A bit of simple math reveals that homemade vanilla extract is the more economical choice. Say you buy two 4-ounce bottles of the good vanilla extract from the grocery store every year. If each jar costs $18, that's $180 over a five-year span.

Should homemade vanilla extract smell like alcohol? ›

You will always smell some alcohol in your extract. However, the smell of a finished extract is usually vanilla first and spirit second. Also remember that no two noses are the same. Someone may smell more vanilla than alcohol, while someone else may smell more alcohol than vanilla.

What grade vanilla bean makes the best vanilla extract? ›
