Ingredients

  • 2 1/2 c crushed vanilla wafers
  • 1 c ground pecans
  • 2/3 c powdered sugar
  • 1/4 c ground walnuts
  • 3 Tbs cocoa
  • 1/3 c spiced rum
  • 2 Tbs honey
  • 1 Tbs salted butter room temp
  • 1 1/2 tsp vanilla
  • Cocoa powdered sugar or finely chopped pecans for rolling

Instructions

  • In a large mixing bowl combine crushed wafers, pecans, powdered sugar, walnuts and cocoa. Set aside. In a separate medium sized mixing bowl whisk together rum, honey, salted butter and vanilla. Once well combined, add to the dry mixture. Use a fork to combine the mixture very well, until the dry ingredients are fully saturated.

  • Use a melon baller or a small cookie scoop to scoop out 1 Tbsp. sized balls, until all of the mixture has been used. Roll each dough ball in between your hands to make them smooth. Place each topping you have for rolling in separate bowls, then roll the balls though the cocoa, powdered sugar or pecans to finish. Ready to serve and eat immediately.
