If you do a Google search you will find that Xiaomi updated their unlock policy with HyperOS for China devices.
With these devices it isn't possible in the first place to unlock them, before you have reached stage 5 on the Chinese Mi forum.
After that you may unlock max. 3 devices in a year. After a year you lost your unlock subscription and must start over again. Also HyperOS will not get updates after unlocking.
For Global HyperOS users there will be changes too, but it will not totally impossible to unlock in the first place (but I will not guarantee anything at the second place)

I don't know, for now, what I will do in the future, if it isn't possible anymore to unlock the bootloader and flash a custom rom I like. Maybe it will be a choice for another brand

No, there's no other way to skip the 7 days. Unless you try to unlock phone that ia older than 2 years, I believe, MiUnlock will automatically unlock it (need further confirmation, happens to some people)
I believe you can accidentally "restart" the countdown if you swap your sim with different sim that is used to request the unlock, or stay offline/airplane for too long (3-5 days). Safe bet is, keep your phone on, don't swap the sim, and stay connected to internet as best as you could until you have successfully unlocked it.

Are you sure you or the RN13P telegram channel are not confused?
The forthcoming HyperOS will stop bootloader unlocking and rollbacks, at present.
Also, why is this thread marked "solved" there is no solution to this, leaving it marked as "Solved" will have people thinking, and search-engine spiders reporting, there is a way to bypass the 7 day wait period

The timer starts when you confirm that you want to unlock.
Afaik: You can disconnect it, you can use it, you can turn it off, you can take the SIM out. On the 7th day you need to turn it on again with SIM inside. Be careful not to start the 7 day timer again when the 7 days are over.

There's a lot of variables in play here. Recently my friend bought a mint second hand poco f1. It's locked. I thought it's more than 3 years old device, so maybe it would be unlocked instantly -- I was wrong, the tool kept insisting 168 hours. At that point, we were using the 7.3.x official global unlock version.
During the 168 hours:
1. The phone was turn off and turn on randomly
2. Xiaomi account was never log off
3. Sometimes the sim card was ejected, inserted again at random
4. Internet connection was not always on
After 168 hours passed, the weird thing happened. We got this unknown error stating to "Please use the common user tool on the official website". We're using the my account which has already unlocked several phones in the past successfully.
If you search that in google, there's many claimed to solve it, but in our case none of them worked: Those are:
1. Use the older 5.5.x unlock tool, or any older version
2. Eject your phone when unlocking processes goes around 30-50% and plugs it again around 90-99%
The only way which worked was: logged out the xiaomi account, relogin using another account. Then the weird thing happened.
Counter was reset to 168 hours obviously (high chance due to relogin with another account). But since the another account wasn't able to enter the unlock tool (sms OTP never arrived), in second day we decided to logged out that another account and relogin with mine again.
Since the unlock tool seemed store my old verified account (no sms OTP neede,d unlike the other one), I tried to unlock it, hoping would be greeted by 168 hours again. This time, it didn't, and it went straight to unlock without any issue.
There you go. Another weird thing from xiaomi unlock.
